Under the direction of Smt. Lilavati Munshi, the wife of the then-food minister, Mr KM Munshi, the All India Women's Central Food Council launched the Institute of Hotel Management, Catering Technology and Applied Nutrition on June 27, 1954, making it the first institution of its type in South East Asia.

Its early roots may be seen on the Versova campus of Bhavans College in an old army barrack. Due to the drought the nation was experiencing at the time, its primary goal was to offer affordable, wholesome food to the general public. With a group of like-minded women that included Smt. Homi J. H. Taleyarkhan and Smt. Leela N. Jog, Smt. Lilavati Munshi established a chain of Annapoornas (restaurants) around the nation, mainly in the major cities.

The three-year hotel management and catering technology program was launched in 1958 and was approved by the Maharashtra State Directorate of Technical Education. To keep up with the expansion, the Institute relocated to its distinct campus in Dadar, which was constructed on property leased from the State Government. At the time, it was known affectionately as Dadar Catering College and was a historical figure. The Institute had phenomenal development under the leadership of Miss Thangam E. Philip, with support from the State and Federal governments. The first Food Craft Institute opened its doors in Kalamassery in 1967, and similar training institutions were also founded all around the nation. In 1982–1983, most Food Craft Institutes had upgrades.

Through the Council, these institutes offer 11 (eleven) different professional programs leading to the award of Certificate, Diploma, Post Graduate Diploma, Bachelor and Master's Degrees. (The last two programs collaborate with Indira Gandhi National Open University).

The number of graduates leaving the Institutes now totals 13000, signifying four decades of catering education in India, up from a modest number of 6 students in 1954.

Today's students receive training to stay up with the hospitality industry's constant evolution.
